Job Description

  • Check and record cooked product temperatures at least 4 times per hour. Inform production of unacceptable temperature.
  • Check and record cooked product weights at least every 15 minutes to ½ hour depending upon product. Inform production of unacceptable weights or adjustments to piece counts.
  • Monitor the color of cooked product.
  • Taste product frequently.
  • Check and record frozen temperatures every hour. Informs production of the necessity for freezer adjustments of defrost.
  • Check and record freezer temperature and dwell time at-least every hour.
  • Time freezer dwell once per shift or when needed.
  • Check and record on-line metal detector sensitivities at least every hour.
  • Check new weights of prepackaged product and record results at least every half hour.
  • Check and record breading pick-ups twice per shift.
  • Monitor breading and batter for appearance (powdery, speckled).
  • Monitor breading and batter usage. Verify and initial.
  • Assist in educating line workers on product packing standards.
  • Assist in educating line workers with G.M.P.’s.
  • Report all problems to Q.A. Crewleader and Q.A. Supervisor.
  • Assist Floor Supervisor and Crewleaders with resolving product problems.
  • Complete all Q.A. daily paperwork related to hob duties. Assure records are complete and factual.
  • Assist with taking off rework, bagging it, labeling, and putting away.
  • Set up or clean up stations. Make sure that all supplies are present, in sanitary condition and good working order.
  • Perform any duties assigned by the Q.A. department or any other company manager.
  • Participate in plant and departmental programs.
  • Open unacceptable bagged product and dump product back on line to repack.
  • Inspect luggers and belts for product left behind at time of changeover.
  • Follow all GMP`s (Good Manufacturing Practices).
  • Report any unusual activities in or around the plant to management, ASAP.
  • Work in a safe manner and report any unsafe conditions to the management, ASAP.
  • Any other duties to maintain the operation of the plant, as needed.
